Pass the beef through a meat grinder twice, add salt, pepper, egg yolks, finely chopped cilantro and mix well.

Dip the prepared balls in egg white, roll in crushed breadcrumbs, dip again in egg white and roll in breadcrumbs again, then fry in oil.
