While the eggs are boiling, grease the baking dish with oil and prepare the mushrooms and onion. Place the sliced mushrooms, lemon juice, and 20 grams of butter in a saucepan, cover, and cook on low heat for 6 minutes. Heat 2 tablespoons of sunflower oil in a pan and sauté the finely chopped onion until golden.
- Butter: 65 g

- Fresh champignons: 250 g
- Sunflower oil: 4 tablespoons

Now melt 25 grams of butter and the remaining sunflower oil in a saucepan, mix in the flour and cook, stirring, for 2 minutes, then slowly pour in the milk and, stirring constantly, cook for another 8-10 minutes. Season the sauce with salt.

Mix 2 tablespoons of sauce, egg yolks, onion, mushrooms, and freshly grated nutmeg in a bowl. Using a spoon, fill the eggs with this mixture and place them in a greased dish. Pour the remaining sauce over, sprinkle with breadcrumbs, and add the remaining pieces of butter. Bake at 200 degrees for 10-15 minutes until golden brown. Serve immediately in the same dish.
