Wipe a piece of salmon fillet (preferably the thicker part, closer to the head) with paper towels. Remove all bones with tweezers if any remain.
- Salmon fillet: 180 g

Rub the fish fillet with rock salt, olive oil, and paprika. Leave for 5 minutes.
- Rock salt: to taste
- Olive oil: 20 ml
- Sweet paprika: to taste
- Hot paprika: to taste

Place the fillet on the grill skin side down and grill for 5 minutes. Then flip it and grill for another 4 minutes. The salmon should have a crispy crust but remain juicy inside. Do not overcook it to the point where flakes appear between the fibers.

Serve the steak with a slice of lemon.
