Fried pork ribs in barbecue sauce

In this recipe, you can choose the cooking method yourself: both a grill and a home oven will do. The Svan salt mentioned in the recipe is sold in specialized shops or markets. Recipe from Pavel Petukhova , chef of the Zaryadye gastronomic center.

Chop the garlic. Wash the ribs, dry them, and rub with garlic and Svan salt. Cover with a lid and leave at room temperature for 1 hour.
- Garlic: 50 g
- Svanetian salt: 50 g
- Pork ribs: 1.5 kg

Prepare ribs on the grill or in the oven. In the first case, move the hot coals away from the center of the grill, place the meat on an oiled rack and grill for 18-20 minutes on each side - it should remain pink when cut. Then brush the ribs with barbecue sauce and grill for another 10 minutes, turning them.
- Pork ribs: 1.5 kg
- Barbecue sauce: 150 g

If the ribs are prepared in the oven, place them in a baking bag or foil with a little vegetable oil. Bake in a preheated oven at 180 degrees for 1.5 hours. Then open the bag or foil, brush the ribs with barbecue sauce on all sides, reduce the temperature to 150 degrees and bake for another 10-15 minutes.
- Pork ribs: 1.5 kg

Transfer the cooked ribs to a plate, cover with a lid, and let them rest for about 10 minutes.
