Plum, combined with vanilla, immediately reminds of some French desserts like the great plum tart. The plum for this jelly can be any: purple, red or yellow.

Prepare all the ingredients.

Boil 1 liter of water with sugar and a vanilla pod in a pot.
- Water: 1.25 l
- Sugar: 100 g
- Vanilla pod: 0.3 piece

Add pitted plums, bring to a boil, and cook for 5–7 minutes.
- Plums: 350 g

Catch the vanilla pod.

Blend the compote with an immersion blender.

Strain the puree through a sieve to remove the skin. Return to heat.

Mix the remaining water with starch until smooth.

Pour the starch solution into the pot and bring to a boil again, stirring with a whisk.

When the jelly becomes homogeneous and starts to thicken, remove it from the heat.
