Chop the bones and trimmings smaller, place them in a soup pot, add sautéed carrots, parsley, an onion, then add celery stalks (or a few slices of celery root), pour water over it all, and put it on the fire.

When the broth boils, remove the foam and continue cooking on low heat for about an hour. Before finishing cooking, add salt to the broth, let it settle, and then strain it.
