Rice flour syrniki with chocolate and bananas are a delicate, airy treat with a deep and rich flavor. Their roots trace back to European cuisine, but the addition of rice flour makes them lighter, while the filling of chocolate and banana adds an unusual sweetness and softness. The cottage cheese base retains the classic structure of syrniki, and coconut flakes add a refined texture. Frying in a drop of olive or cocoa oil enhances the flavor notes, creating a crispy crust. Perfect for breakfast or dessert, syrniki pair wonderfully with berries, yogurt, or nuts. If they aren't ready yet, just one minute in the microwave makes them perfect. It's a great option for those who want to enjoy a classic with an unexpected sweet twist!

Take 1.5 tablespoons of dough and shape into balls, then make a hole and place a piece of chocolate in the middle, shape into a ball again, roll in flour and put on the pan. I fry in a drop of olive oil; it's also very tasty in cocoa butter.
- Dark chocolate: 9 pieces
- Rice flour: 3 tablespoons

Fry the syrniki 2-3 times on each side under a lid over medium-high heat. If they burn, lower the heat. Fry for about 15 minutes :) If they're not cooked through (I've had that happen), just pop them in the microwave for a minute and all is good? I recommend!
