Pumpkin Draniki

Pumpkin is a great base for a draniki: juicy, fibrous, tasty. But still not quite ready to become a draniki, so here they added two eggs and a little wheat flour.

Prepare all the ingredients.

Peel the onion and chop it into small cubes.
- Onion: 1 head

Heat some vegetable oil in a pan and sauté the onion until soft.
- Vegetable oil: 60 ml
- Onion: 1 head

Peel the pumpkin and remove the seeds, then grate it on a coarse grater.
- Pumpkin: 500 g

Chop the parsley.
- Parsley: 15 g

Add a little salt to the grated pumpkin, mix, and then squeeze out the juice.
- Pumpkin: 500 g
- Salt: to taste

Mix pumpkin, fried onion, parsley, and crushed garlic.
- Pumpkin: 500 g
- Onion: 1 head
- Parsley: 15 g
- Garlic: 3 cloves

Add eggs, flour, salt, and pepper, and mix well.
- Chicken egg: 2 pieces
- Wheat flour: 75 g
- Salt: to taste
- Ground black pepper: to taste

In a clean pan, heat some vegetable oil and spoon the draniki onto it.
- Vegetable oil: 60 ml

Fry on low heat until golden brown on both sides. Do the same with all the dough.

Serve pumpkin pancakes with sour cream.
