Whisk a raw egg in cold water or milk (1/2 cup), adding a scant teaspoon of salt. Add 2 cups of sifted flour and knead a stiff dough.

Pass the cottage cheese through a meat grinder, add sugar, yolk, 1 tablespoon of melted butter, 1/2 teaspoon of salt, and mix everything well.
