Roast sesame seeds in a pan until golden brown and let cool. In a coffee grinder, mix sunflower seeds and sesame, almonds, and salt for a few seconds. The mixture should not turn into flour but remain coarse.
- Sesame seeds: 1 tablespoon
- Sunflower seeds: 2 tablespoons
- Peeled almonds: 4 tablespoons
- Salt: to taste

There is also a lighter version of vegan parmesan - gomasio. To prepare it, mix roasted and ground sesame seeds with a pinch of salt.
