Preheat the oven to 230 degrees.

Cut the cabbage into small pieces and place them on a baking sheet. Drizzle with olive oil, season with salt and pepper. Roast until golden and tender for about 10 minutes.
- Cauliflower: 300 g
- Extra virgin olive oil: to taste
- Coarse salt: to taste
- Freshly ground black pepper: to taste

Transfer the cabbage to a bowl and add finely chopped onion, deseeded and finely chopped pepper, and dressing (see note). Mix well and transfer to a plate. Sprinkle with cilantro and serve immediately.
