Preheat the oven to 200 degrees.

Peel the sweet potato and slice it thinly on a mandoline.

Grease a rectangular baking dish with 1 tablespoon of butter.
- Butter: 3 tablespoons

Layer one third of the sweet potato evenly at the bottom of the dish. Sprinkle with 0.25 cup of Parmesan. Repeat the layers 2 more times with the remaining sweet potato.
- Sweet potato: 1.8 kg
- Grated Parmesan cheese: 90 g

In a small bowl, mix cream, salt, pepper, and cayenne pepper. Pour over the potatoes. Top with pieces of butter, cover with foil, and bake for 20 minutes.
- Cream 40%: 2 glasss
- Salt: 1 teaspoon
- Freshly ground black pepper: 0.5 teaspoon
- Cayenne pepper: 0.3 teaspoon
- Butter: 3 tablespoons
