Prepare all the ingredients.

Chop the hazelnuts with a knife into fine crumbs.
- Roasted hazelnuts: 30 g

Pour some water into a saucepan, place a bowl on top, and bring to a boil — this is a water bath. Also prepare a container with ice or cold water to place the bowl in — this is an ice bath.

Reduce the heat under the saucepan, place white chocolate in a bowl on it, melt it, and bring it to 40–45 degrees.
- White chocolate: 100 g

Place the chocolate bowl in an ice bath and cool it to 25–26 degrees while stirring.

Then return the bowl with chocolate to the hot water bath and heat it to 30–35 degrees.

Dip raspberries in chocolate, then roll in nut crumbs. Let the chocolate set.
- Raspberry: 200 g
- White chocolate: 100 g
- Roasted hazelnuts: 30 g

Blend goat cheese with cream until smooth. Transfer the cream to a piping bag.
- Soft goat cheese: 50 g
- Heavy cream: 50 ml
