Mix ricotta, egg, sugar, salt, and flour until smooth - it's better to do this with a spoon rather than a mixer. From the resulting mass, form 4 sausages about 1 cm in diameter and cut into triangles. Place in boiling salted water and cook for 2 minutes after they float.
