Herring in mustard marinade

Herring in mustard marinade is a true gem of Swedish cuisine, embodying the traditions of northern gastronomic delicacies. This recipe combines the salty richness of herring fillet with the piquant depth of Dijon mustard and an unexpected sweet note of honey. White wine vinegar and coffee add a subtle sharpness to the marinade, creating a layered flavor profile. Marinating makes the fish remarkably tender, allowing it to absorb all the nuances of the sauce. It is ideally served with rye bread and fresh dill that enhances the dish's flavor. Such a delicacy traditionally graces festive Swedish tables, especially during Christmas and Easter periods, and is part of local culture, bringing generations together at one table.

1
First, whisk together the mustard, sugar, vinegar, honey, salt, and coffee until smooth.
- Dijon mustard: 50 g
- Sugar: 50 g
- White wine vinegar: 30 ml
- Honey: 1 teaspoon
- Salt: 0.5 teaspoon
- Instant coffee: 0.5 teaspoon
2
Then add butter and mix well again. The coffee won't dissolve completely right away, but this will be fixed during the fish marinating time.
- Vegetable oil: 100 ml
3
Cut the herring into portion-sized pieces and place in the marinade. Put in an airtight container and refrigerate for 12 hours to marinate.
- Salted herring fillet: 4 pieces

Serve chilled with rye bread and dill.
