Remove the outer leaves from the cabbage, wash it, dry it, and cut it into four parts.
- White cabbage: 1 kg

Place the cabbage in an enamel pot, add anise and cumin, pour boiling salted water over it, and press down with a small weight.

When the brine cools down, add a crust of black bread to the cabbage and leave it in a warm place for 3-4 days.
