Flaxseed cookies are a simple and healthy dessert inspired by Russian culinary traditions, where flax seeds are valued for their nutritional properties. Its history begins with the desire to create a healthy alternative to classic baked goods. The crispy crust and soft, rich texture inside make it unique. Flax seeds add a light nutty note, while added ingredients like raisins and dark chocolate enhance the flavor with bright contrasts. This cookie is perfect as a healthy snack or an addition to morning tea. It is rich in fiber that aids digestion and natural oils that nourish the body. It is unique in that it contains no flour, and the dough is formed through moisture and natural thickeners. The simplicity of preparation makes it an excellent option for those who want to enjoy taste and benefits without unnecessary complexities.

1
Grind flax seeds, your favorite whole grain flakes (or just oats), and nuts. The ratio is about 1 to 1 to 1/2. Add spices to taste.
- Flax seeds: 0.5 glass
- 7 grain flakes: 100 g
- Almond: 0 g
- Spices: to taste
2
Pour everything with hot water, wait a bit, and mix well with a spoon. The consistency should be like wet sand that can be shaped into cookies by hand. The dough is ready.
3
Let the mixture cool a bit, just so it's not scalding hot.
4
Add fillers. I have bitter chocolate and raisins. You can add anything sweet and salty, as it is quite neutral.
- Raisin: to taste
5
Place small, flat, shaped cookies on the oven rack.
6
Bake at about 180 degrees with top and bottom heat for about 15 minutes and let cool/dry in the turned-off slightly open oven. The cookies will form a hard crust, but remain soft inside; check periodically to prevent burning, as ovens vary.
