Diet condensed milk

Diet condensed milk is an exquisite yet simple dessert inspired by French culinary traditions. This version of condensed milk is perfect for those mindful of their diet as it contains no excess sugar; the light sweetness comes from stevia extract. The flavor is delicate and soft with pleasant creamy notes, while the texture is smooth and velvety. After cooling, the condensed milk becomes thicker and richer, achieving the ideal consistency. It can be added to coffee, spread on toast, or used in baking. The recipe highlights the art of transforming simple ingredients into a refined treat and requires attention to achieve the perfect balance of thickness and taste. It's not just a sweet but a sophisticated pleasure that will enhance any morning or dessert table.

1
Mix starch with dry milk, add stevia, and crush the sweetener tablets.
- Cornstarch: 1 tablespoon
- Skim milk powder: 3 tablespoons
- Stevia extract: 1 teaspoon
- Sugar substitute in tablets: 6 pieces
2
Pour in 200 ml of milk, mix until a thick homogeneous mass, try to eliminate lumps as much as possible, a mixer can be used.
- Milk: 250 ml
3
Pour in the remaining milk (leave 50 ml for later), and mix well again.
- Milk: 250 ml
4
Put in the microwave for about 4 minutes, taking it out every minute to stir well until the mixture thickens (I did it at 850 W, and by the third minute the mixture started to 'run away', so you need to watch the process closely and stop and stir more often if necessary).
5
If the mixture seems too thick, gradually add milk and stir.
- Milk: 250 ml
6
Condensed milk achieves perfect taste and consistency after a night in the refrigerator.
