Adyghe cheese cookies are an amazing combination of softness and light crunchiness, complemented by a delicate creamy flavor with a nutty hint of poppy seeds. Ossetian cuisine is famous for its traditional flour products, and this recipe reflects all its warmth and coziness. Adyghe cheese gives the dough a special texture—it becomes airy yet dense with a gentle creamy undertone. The sugar-dusted cookies acquire a caramel crust, while the poppy adds an exquisite bitterness. Grate cheese and frozen butter on a coarse grater, add flour, sugar, poppy seeds, and knead the dough until it becomes firm.
- Adyghe cheese: 150 g
- Butter: 150 g
- Wheat flour: 120 g
- Sugar: 120 g
- Poppy: 20 g

Then shape it into a sausage. Cut it into pieces about 1-1.5 cm. Dip in sugar on both sides and place on a baking sheet lined with parchment paper. The cookies spread a bit, so they should be spaced apart.

Place in a preheated oven at 190°C for 20-25 minutes (until browned).

When taking cookies out of the oven, you need to quickly separate them from the paper with a spatula, otherwise they will stick and it will be harder.
