Oat bran cheesecake is a delicate and healthy version of the classic American dessert. Its base is made from oat bran, giving it a unique texture and a light nutty note. The creamy layer, rich in milky tenderness, can be enhanced with vanilla, banana, or chocolate flavors, creating various taste variations. The dessert is sweet yet light due to the use of sugar substitutes and stevia. Its softness is ensured by adding gelatin, which turns the cheesecake into an airy treat. It is excellent for healthy eating as it contains minimal fats and maximum benefits. It is best served chilled to keep its structure firm and its taste refreshing. This cheesecake is the perfect choice for those seeking a balance between indulgence and health care.

1
First, the cake base needs to be baked. For this, bran is ground into flour, kefir, 1 egg, and half a tablet of sugar substitute are added. The mixture is well kneaded and poured onto parchment. The baking process lasts 15-20 minutes at a temperature of 190 degrees. The finished cake base should be dry.
- Oat bran: 4 tablespoons
- Chicken egg: 1 piece
- Sugar substitute: 15 g

Next, we need to make syrup. For this, dissolve stevia in a full glass of hot water.
3
Prepare the cheese layer: mix cheese, milk, add sweetener, a quarter teaspoon of vanillin, and flavoring. - For banana cheesecake, add 100g of banana, cut into small pieces (the riper, the sweeter). - For chocolate cheesecake, add 3-4 teaspoons of cocoa.
- Soft cheese: 400 g
- Milk 1%: 100 ml
- Sugar substitute: 15 g
- Vanillin: 3 g

Blend thoroughly until smooth. Prolonged and rapid whipping will aerate the mixture; otherwise, the dessert may crack.
5
Soak gelatin in cold water and heat until dissolved, do not boil. Add to the cottage cheese mixture and mix thoroughly again. Pour the resulting mass over the base and refrigerate overnight.
- Gelatin: 15 g
