Waffles on yeast dough
6 servings
90 minutes
Yeast dough waffles are a refined breakfast with a rich history rooted in European cuisine. Unlike traditional waffles, this version uses yeast, which gives the dough airiness and lightness. The finished waffles are soft inside and slightly crispy outside, with a subtle vanilla aroma. Their taste resembles delicate biscuits, and when paired with honey, fruits, or nuts, they become a true delicacy. These waffles are perfect for leisurely morning enjoyment or cozy family tea time. They do not require greasing the waffle iron with oil, making the cooking process even easier. This dish can be served sweet or with savory toppings, and the ability to vary ingredients allows everyone to find their ideal option. Enjoy your meal!

1
Slightly warm the milk. It should be warm but not hot, otherwise the dough won't rise.
- Milk: 175 ml
2
Dissolve the yeast in milk.
- Dry yeast: 1 teaspoon
3
Separate the yolk from the white. Whip the white into a foam. (You can skip this step and whip the whole egg at once, but the dough will be less fluffy that way).
- Chicken egg: 1 piece
4
Add sugar to the yolk (any kind can be used, in my case cane sugar), a little milk, oil (I used vegetable oil, but you can use 40 g of melted butter instead), salt, and vanilla extract (optional). Whisk.
- Sugar: 20 g
- Milk: 175 ml
- Vegetable oil: 4 tablespoons
- Salt: pinch
- Vanilla extract: 0.5 teaspoon
5
Gradually add flour and the remaining milk to make the dough lump-free. Start with a little flour, mix everything, then a little milk, mix again, and so on.
- Wheat flour: 150 g
- Milk: 175 ml
6
Add protein to the dough and leave it in a warm place for an hour, or until it doubles in size.
- Chicken egg: 1 piece
7
Preheat the waffle maker or waffle pan well and start cooking. Watch to ensure the waffles don't burn. However, they cook very quickly on my pan. It takes about 1.5-2 minutes for one waffle. There's no need to grease the waffle maker; everything comes off easily and nothing sticks.
- Vegetable oil: 4 tablespoons

Serve waffles with yogurts, jams, fruits, nuts, and honey. In general, add everything you love. Enjoy your meal!
