Cheese flatbreads on kefir
5 servings
60 minutes
Cheese flatbreads with kefir are a cozy combination of tender dough and rich cheese filling. This dish has European roots but its preparation resembles traditional Eastern techniques for working with dough. Kefir gives the flatbreads lightness and softness, while cheese, especially combined with cottage cheese and garlic, creates a rich flavor with spicy notes. They turn golden brown with a crispy crust while remaining soft inside. They can be served as a standalone dish or as an accompaniment to main courses. They are especially good hot when the filling remains tender and stretchy. Flatbreads are perfect for a cozy family dinner or quick home snacks.

1
Add baking soda to warmed kefir and mix. Add sugar and salt. Sift the flour. Knead the dough.
- Kefir: 1 glass
- Soda: 0.5 teaspoon
- Sugar: 0.5 teaspoon
- Salt: 0.5 teaspoon
- Wheat flour: 1.5 glass
2
Add vegetable oil to your hands and the dough. Knead by hand and gather into a ball. If it sticks a little — it's okay, there's no need to achieve a tough consistency. Shape the dough into flatbreads using flour. Let the dough rest for 20-30 minutes.
- Wheat flour: 1.5 glass
3
Grate the cheese, you can add cottage cheese and garlic to it. The filling should be thick. Do not take very salty cheese.
- Cheese: 150 g
4
Form balls of dough and filling of the same size.
5
Roll out the dough, place the filling inside, close it, flatten it to the size of the pan, put it on a dry heated pan for 2-3 minutes on one side until golden brown, and then for 2 minutes on the other side.
