Soak gelatin in 2 tablespoons of cold water and let it swell.
- Gelatin: 1 tablespoon
- Water: 2 tablespoons

Place two slices of mandarin in a dessert cup or silicone muffin molds, peeled at least from the sides.
- Tangerines: 2 pieces

Mix cream and milk, heat on low without boiling.
- Cream 33%: 250 ml
- Milk 3.2%: 200 ml

When heated, add the zest and juice of two mandarins, sugar, vanilla sugar or vanilla (if available), and gelatin. Stir constantly until the gelatin and sugar are completely dissolved, do not bring to a boil.
- Mandarin zest: 0.5 teaspoon
- Freshly squeezed tangerine juice: 0.5 glass
- Sugar: 3 tablespoons
- Vanilla sugar: 1 teaspoon
- Gelatin: 1 tablespoon

Pour the mixture into molds and cool before placing in the refrigerator for 2-3 hours.

Before serving, decorate with cocoa, a mint leaf, and tangerine jelly.
