In a thick-bottomed saucepan, pour 300 g of sugar and water, place it on low heat, and cook until the sugar starts to turn light brown. While the water hasn't boiled, you can stir with a whisk; after that, do not stir with anything, just wipe the walls with a damp brush where sugar crystals form.
- Sugar: 430 g
- Water: 75 ml

As soon as the mixture starts to change color, remove from heat, and when the mass stops bubbling, add 50 g of diced butter. Stir and return to low heat.
- Butter: 250 g

Boil the cream and add it to the caramel in 2-3 batches. Be careful, the mixture foams a lot. Add salt.
- Cream 30%: 300 ml

Pour the finished caramel into a clean container, cover with film, and cool. The salted caramel is ready.

For the brownies, melt chocolate and 200 g of butter in a water bath. Do not overheat!
- Dark chocolate: 200 g
- Butter: 250 g

Whisk 3 eggs and 130 grams of sugar separately. Add the cooled chocolate mixture and stir. Gradually add flour and mix gently. The brownie mixture is ready.
- Chicken egg: 3 pieces

Break the cookies. You need to take hard cookies like 'shortbread'. You can take a Twix bar.

Grease the brownie pan with butter, pour in the chocolate batter, place and sink pieces of cookies on top. Spoon caramel on top and swirl it. Don't be stingy with the caramel, but you won't need all of it.
