Beat the egg and egg yolk with sugar until white. Add flour and knead the dough.
- Chicken egg: 1 piece
- Egg yolk: 1 piece
- Sugar: 100 g
- Wheat flour: 1 glass

Preheat the oven to 160C, grease the baking tray with butter and sprinkle with flour.
- Butter: 1 teaspoon
- Wheat flour: 1 glass

Use a piping bag to pipe straight sticks 10-12 cm long onto a baking sheet. Sprinkle the galettes with almond flakes and bake for 10 minutes.
- Grated almonds: 4 tablespoons
