Baku kurabye is a hit of Soviet confectioneries, a universal type of cookie for the entire Mediterranean and Middle East. The distinctive feature of Baku kurabye is the presence of jam in the center of a shortcrust pastry rose . The dough itself is not too sweet according to this recipe, because the jam, which is already cloying in itself, is ultimately responsible for this sweet taste.

Mix room temperature butter with powdered sugar.
- Butter: 100 g
- Powdered sugar: 40 g

Add the egg whites and flour. Remove the seeds from the vanilla pod and add them to the dough.

- Wheat flour: 160 g
- Vanilla pod: 1 piece

Transfer the dough to a piping bag and squeeze out small cookies onto the baking sheet.
