Peel the quince, cut it in half. Remove the cores and keep the seeds.

Boil the peeled skin with the bones in a small amount of water (reduce to 1 cup).

Preheat the oven to 200 degrees, place the quince cut side up on a baking sheet covered with foil, sprinkle sugar into each half, and drizzle with two tablespoons of wine. Wrap the fruits in foil and pour water from the skin and seeds onto the baking sheet. Place in the oven for one to one and a half hours (the quince should become soft). Five minutes before it's done, unwrap the foil and brown the cut sides.
