Fluffy cheese pancakes are a warm and cozy dish of Russian cuisine that many have known since childhood. Their history is rooted in the traditions of home breakfasts, where the aroma of fresh pancakes filled the house with warmth. Tender inside and slightly crispy outside, they have a pleasant creamy taste with a hint of sweetness. During preparation, cottage cheese is mixed with sugar and eggs and then enriched with flour to create an airy yet dense texture. Fried in a hot pan, they become golden and appetizing. Perfect in tandem with sour cream, jam or honey, cheese pancakes can be served as a hearty breakfast or dessert. They are easy to make but provide a special gastronomic pleasure that awakens memories of home comfort.

1
To prepare the dough from cottage cheese, I put sugar in a bowl, crack in an egg, and beat them with a mixer until a thick, homogeneous mass forms.
- Sugar: 2 tablespoons
- Chicken egg: 2 pieces
2
Next, I add cottage cheese and also whip it.
- Cottage cheese: 250 g
3
Then I add the flour and mix everything thoroughly with a mixer. The dough with cottage cheese and flour should be soft, but not liquid and not too stiff.
- Wheat flour: 5 tablespoon
4
I start making cheese pancakes from the prepared dough.
5
I sprinkle some flour on the cutting board. Then, using a tablespoon dipped in water, I take the cottage cheese dough and place the resulting dough ball on the board. I do the same with the rest of the dough.
- Wheat flour: 5 tablespoon
6
When all the dough balls are placed, I lightly sprinkle them with flour.
- Wheat flour: 5 tablespoon
7
I put the pan on the heat to warm it up, pouring sunflower oil into it. When the pan is well heated, I place the cheese pancakes in it.
8
I fry the syrniki on both sides, occasionally flipping them from one side to the other for about 5 minutes on low heat.
