Financier with pistachios and cherries is an exquisite French dessert from the pastry shops of Paris. Originally created as a treat for financiers due to its gold bar-like shape, these airy pastries have a rich nutty flavor from the combination of almonds and pistachios, while cherries add a juicy sweet-sour note. Orange blossom brings a subtle floral aroma that enhances the taste further. The texture of financier is delicate, slightly moist inside with light caramelization on the surface. Preheat the oven to 160 degrees. In a large bowl, mix ground almonds and pistachios, add flour and sugar, and whisk together. Then add melted butter and orange blossom water to this mixture. Separately, whisk egg whites by hand until soft peaks form. Combine the egg whites with the flour mixture and gently fold with a spatula.
- Ground almonds: 70 g
- Unsalted Pistachios: 70 g
- Wheat flour: 70 g
- Sugar: 120 g
- Butter: 120 g
- Orange blossom water: 2 tablespoons
- Egg white: 6 pieces

Fill half of the baking molds for financiers with the prepared batter (or muffin molds will work too) and place half a cherry in the center. Then evenly cover with the remaining batter so that the berries are in the middle of each pastry.
- Cherries: 10 pieces

Place the molds in the oven and bake for fifteen to twenty minutes until golden brown. Then remove and cool.
