We mix flour, melted butter, and chocolate. We crumble it.
- Wheat flour: 100 g
- Butter: 50 g
- Dark chocolate: 40 g

Add water. Mix the dough and pour it into the mold. Place in the oven (160 degrees) for just 7 minutes.
- Water: 70 ml

We pour cream over the mint leaves and blend them in a blender.
- Fresh mint: 1 bunch
- Heavy cream: 30 ml

Using a mixer, we blend cream cheese, sugar (leaving a tablespoon of sugar for topping), and sour cream (only using 190 g).
- Cream cheese: 340 g
- Sugar: 150 g
- Sour cream: 315 g

Add the yolks one by one, mixing the mass thoroughly after each.
- Egg yolk: 3 g

We combine the main and creamy mint mass. We add green dye. We mix.
- Green food coloring: pinch

Fill the mold with the prepared mass and the chocolate base. Bake in the oven at 160 degrees for about 50 minutes, or use a water bath.

For the topping, mix the remaining sour cream (125 g), sugar (1 tablespoon), and vanillin. When the cheesecake is ready, spread the topping over its surface and send it to the oven for another 10 minutes.
