This recipe draws inspiration from traditional American cheesecake but transforms it into a refreshing treat. The velvety base of cream, Philadelphia cheese, and condensed milk is complemented by a crunchy crumb of shortbread cookies, creating the perfect balance of softness and crunch. Mix cheese, cream, and condensed milk in a pot. Add a pinch of salt and lime juice, and mix well until smooth. Tightly cover the pot with a lid and refrigerate for 5-6 hours or overnight.
- Low fat Philadelphia cheese: 200 g
- Cream 33%: 0.5 glass
- Condensed milk: 300 g
- Salt: pinch
- Lime juice: 0.5 glass

Put the cookies in the blender and grind them into fine crumbs.

After the time has passed, take the pot out of the fridge, pour the cheese mixture into the ice cream maker, and churn for 20-40 minutes. In the last minute of churning, add crushed cookies. At the end of churning, the mixture will resemble softened ice cream. Fill a container with the mixture and place it in the freezer for 3-4 hours until fully set.

If you don't have an ice cream maker, immediately pour the frozen mixture into a container, add crushed cookies, mix well, and place it in the freezer. Take out the container and stir the contents every half hour until it sets.

Serve ice cream in dessert glasses. First, moisten the edges of the glasses with water and coat them inside and out with large sugar crystals. Optionally, garnish the ice cream with lime zest and mint leaves.
