Peel the apples and remove the core, then chop them finely. Transfer to a bowl and add nuts, crumbled cheese, thyme, maple syrup, and lemon juice. Mix, cover, and let it sit while you prepare the dough.
- Green apples: 2 pieces
- Crushed walnuts: 0.5 glass
- Gorgonzola cheese: 0.3 glass
- Chopped fresh thyme: 1 tablespoon
- Maple syrup: 2 tablespoons
- Lemon juice: 1 teaspoon

Preheat the oven to 180 degrees.

Roll out the dough into a circle about 35 cm in diameter (you don't need to make the edges very even) and transfer it to a baking sheet.
- Fresh puff pastry: 400 g

Place the filling in the center of the dough and spread it, leaving about 5 cm at the edges. Fold the clean edges over the filling so that the apples are visible in the center.
