Kozuli is a type of gingerbread that was baked in the Russian North for Christmas. They were made in the shape of goats - hence the name - as well as deer, rams and other livestock that could be found in the gospel barn.

Melt butter with honey and sugar in a saucepan.
- Butter: 100 g
- Honey: 150 g
- Sugar: 200 g

Add a pinch of salt to the yolks, whisk them, pour into melted butter, and mix quickly.
- Egg yolk: 6 pieces
- Salt: pinch

Then add flour to the hot mixture. It's better to add it slowly, in portions, mixing with a wooden spatula. The flour cooks in the hot oil, and the dough holds its shape well.
- Wheat flour: 1 kg

Mix all the flour, pour the dough onto the table, and knead it by hand for a long time. Knead for at least ten minutes.

Roll out the dough to a thickness of 1 cm and cut out shapes using a special cutter or just a knife.

Place the shapes on a baking sheet lined with parchment paper and put in a preheated oven at 200 degrees for fifteen to twenty minutes.

Make the glaze: mix two egg whites with powdered sugar. Take out the cookies and, while they are hot, brush them with the glaze. You can also make eyes for the cookies - for example, from dried or fresh berries.
