Almond cookies with brown sugar are an exquisite treat from European culinary tradition. This cookie combines the tenderness of buttery dough and the crunchy texture of whole almonds, creating a harmony of flavors. Brown sugar adds a warm caramel sweetness to the baked goods, while vanilla contributes subtle aromatic notes. Historically, almond cookies are associated with cozy family tea times and festive evenings. They pair wonderfully with coffee, tea, or dessert wine and can also make a splendid gift in a beautifully decorated box. The simplicity of preparation makes it accessible even for novice cooks, while the result is invariably delightful — golden, fragrant, and airy cookies that melt in your mouth and bring joy.

Mix flour, baking soda, and salt. Beat softened butter with sugar using a mixer until creamy, then add the egg and vanilla. Reduce the mixer speed and gradually add the flour. Then add whole nuts, mix well, and divide the dough into 2 parts. Shape each piece into a long sausage, wrap in plastic, and refrigerate for 4 hours or freeze for 30 minutes.
