Beat the egg yolks with sugar until fully dissolved and the mixture is light. Add mascarpone and whip until smooth. Whip the egg whites to a stiff foam. Add to the mascarpone mixture.
- Chicken egg: 5 piece
- Cane sugar: 180 g
- Mascarpone cheese: 250 g

Mix coffee with brandy. Place some biscuits in the coffee to line the bottom of the mascarpone mold. Once the biscuits are soaked, use them to line the bottom of the mold.
- Black coffee: 25 g
- Brandy: 3 tablespoons
- Savoiardi cookies: 20 pieces

Spread half of the mixture on the biscuits, then another layer of biscuits and again mascarpone. Place in the refrigerator for 2 hours or overnight. Sprinkle with chocolate.
