Gingerbread is one of the most recognizable symbols of winter holidays. This recipe comes from German cuisine, where aromatic spices like cinnamon, cloves, and ginger create an unforgettable taste. A light citrus note from orange zest gives the gingerbread a special freshness. Their rich, slightly sweet, spicy flavor pairs perfectly with hot chocolate or mulled wine. Traditionally baked in the shape of little people or houses and decorated with icing, they are not only a tasty treat but also a festive delight. Due to their dense texture, they store well and can be made in advance. This is the perfect treat for cozy winter evenings filled with warmth and spice aromas.

Sift the flour and spices into a deep bowl. Cut the butter into small cubes, mix with the zest, and rub vigorously with the flour until it resembles wet sand or bread crumbs.
- Wheat flour: 500 g
- Ground cinnamon: to taste
- Ground ginger: to taste
- Ground cloves: pinch
- Butter: 150 g
- Orange zest: 2 tablespoons

Lightly beat the sugar with the eggs, add liquid honey. Pour this mixture into the flour mixture and knead the dough. The result should be a brown, shiny lump. Wrap the finished dough in film, flatten it a bit, and place it in the refrigerator for at least an hour. It's easier to work with chilled dough.
- Brown sugar: 150 g
- Chicken egg: 2 pieces
- Honey: 3 tablespoons

Roll out the dough on a table lined with parchment, so your figures won't lose shape when transferring to the baking sheet. The finished sheet should be about 5 millimeters thick, no more.

Cut out cookies with molds, remove excess dough from the parchment. Transfer the paper with gingerbread men to the baking sheet and bake at 180 degrees for 12-15 minutes until golden.

Remove the figures from the oven and let them cool for a couple of minutes on the tray. They will dry a bit, and then you can safely transfer them to the baking basket.
