Puff pastry gata cookies

The recipe was shared with us by the brand chef of the Gayane's restaurant, Gayane Breiova.

Pour 1 kg of flour into a container and grate 200 grams of butter.
- Wheat flour: 1550 g
- Butter: 1150 g

Add 4 egg yolks and mix until smooth consistency.
- Egg yolk: 5 piece

Add salt, citric acid, vodka, vinegar and gradually pour in warm water. Knead the dough.
- Salt: to taste
- Citric acid: pinch
- Vodka: 70 ml
- Vinegar: 70 ml
- Water: 1.5 glass

Prepare the dough grease. Mix 200 grams of flour with 800 grams of butter until smooth.
- Wheat flour: 1550 g
- Butter: 1150 g

Roll out the dough and grease it with the prepared mixture. Cover and refrigerate for 30 minutes.

Take out the dough, grease it again, and put it back in the fridge. Do the same two more times.

Prepare khoriz — the filling for gata. Mix sugar with 150 grams of butter.
- Butter: 1150 g

Gradually add flour to the egg mixture to achieve a crumbly mass. About 350 grams of flour will be needed for this.
- Wheat flour: 1550 g

Add vanilla.
- Vanilla: to taste

Spread the filling over the rolled-out dough, completely covering the layer.

Wrap in a roll, brush with egg yolk, and cut diagonally.

Send to a preheated oven at 200 degrees for 20 minutes.
