Granita with watermelon

Watermelon granita is a refreshing dessert that captures the brightness of summer sun and the juiciness of sweet watermelon. This cool icy sorbet hails from Sicily, where it is traditionally made with fruits, coffee, or lemon. In this version, juicy watermelon, a bit of sugar, and a splash of vodka turn into airy ice crystals that melt in your mouth, revealing a refreshing and sweet flavor. The vodka prevents the granita from freezing into a solid block, making its texture light and crumbly. Serving it with berries adds an extra fruity note and sophistication to the dessert. It's the perfect way to escape the summer heat while enjoying the natural sweetness and lightness of this treat.

1
Cut the watermelon flesh into cubes and blend in a food processor. Strain through a sieve into a bowl, add sugar and vodka, then pour into a plastic container. Cover and place in the freezer for at least 3 hours.
- Watermelon: 1 kg
- Sugar: 2 tablespoons
- Vodka: 3 tablespoons
2
Take out of the freezer, leave for a few minutes to let the mixture thaw: vodka will prevent the mixture from freezing too much. Stir with a fork to break into crystals. Return to the freezer until serving.
3
Then pour the prepared granita into frozen glasses, sprinkle with berries, and serve.
- Fresh berries: 60 g
