Simple Caramel Sauce

Simple caramel sauce is an elegant blend of sweetness and a hint of tartness that enlivens desserts and drinks. Take the finest sugar or crush regular sugar in a mortar. Then place it with 2 tablespoons of cold water and lemon juice in a saucepan. Cook over high heat, stirring constantly, until the mixture turns golden brown.
- Sugar: 1 tablespoon
- Lemon juice: 0.3 teaspoon

Remove from heat and carefully add hot water — 175 ml, — there will be a lot of steam, don't burn yourself. Return the pot to the heat and cook for another 5 minutes until the sauce thickens.

Remove from heat, let it cool, and pour into a small jug before serving.
