To prepare almond cookies, first blanch the almonds, peel them, and let them dry in a warm place. Grind the dried almonds finely in a mortar, gradually adding egg whites (2-3) and sugar.
- Almond: 200 g
- Egg white: 6 pieces
- Sugar: 1.8 glass

Add the remaining egg whites to the almond mass, mix well and heat; then slightly cool, add flour and mix; after that, transfer to an envelope and shape into small patties on a sheet of paper.

Place the prepared cookies on a metal sheet and put them in a warm oven to bake. During baking, the cookies should brown and dry well.

When the cookies are ready, transfer them with the paper to a slightly damp napkin.

As soon as the cookies start to pull away from the paper, they should be removed and placed in a vase.
