Baking pancakes is our Russian tradition, and it is worth remembering not only on Maslenitsa. And if you want to have a real feast, then you can depict a whole pancake cake. With thin layers of pancakes, which here act as orzhey , and fluffy sour cream. For a complete impression, it is better to use bright berries to break up the white monochrome of the cake, you can also use frozen ones - but then be sure to defrost them first and drain the excess juice, so that instead of festive decor you do not get a tasty, but sloppy jelly.

Whisk the eggs with sugar until dissolved.
- Chicken egg: 2 pieces
- Sugar: 80 g

Add flour, milk, a pinch of salt, and 1 tablespoon of oil, and mix until smooth. Cover the dough with plastic wrap and refrigerate for 30 minutes.
- Wheat flour: 160 g
- Milk: 500 ml
- Salt: pinch
- Vegetable oil: 30 ml

Pass the cottage cheese through a sieve.
- Cottage cheese 9%: 400 g

Place chilled sour cream in the mixer bowl, add powdered sugar and vanilla sugar, and mix on low speed for 1 minute. Then increase the speed and whip the sour cream into a fluffy cream.
- Sour cream 25%: 200 g
- Powdered sugar: 60 g
- Vanilla sugar: 10 g

Switch the speed to minimum and gradually add cottage cheese to the sour cream, 2 tablespoons at a time. Place the finished cream in the refrigerator.
- Cottage cheese 9%: 400 g

Heat the pancake pan well and grease it with oil. Pour the pancake batter onto it, spreading it evenly across the bottom. Fry for 1-2 minutes until the edge of the batter is browned.
- Vegetable oil: 30 ml
- Wheat flour: 160 g
- Milk: 500 ml
- Salt: pinch

Flip the pancake, fry for another minute, then transfer it to a clean plate. Fry all the pancakes this way.

Place a drop of cream on the cake plate and put a pancake on it, then add about 1 tablespoon of cream on top and spread it over the pancake with a spatula.
- Sour cream 25%: 200 g

Assemble the cake by spreading cream on each layer. Decorate the cake to your taste - for example, with fresh berries or fruits.
