Lviv syrniki is a symbol of Lviv and as iconic a Ukrainian dessert as the Kyiv cake. These are not the usual syrniki, but rather a casserole. In the classic version, raisins and lemon zest are added to the Lviv syrniki, but there are versions with fresh berries, cocoa and even potatoes. The finished syrniki is covered with glaze and left to stand in the refrigerator for 4-5 hours before serving.

Prepare the necessary ingredients.

Pass the cottage cheese through a sieve.
- Cottage cheese: 500 g

Separate the whites from the yolks.

Beat the yolks with 130 grams of sugar until white, then add cottage cheese, semolina, and 110 g of softened butter, knead until smooth.
- Chicken egg: 4 pieces
- Sugar: 170 g
- Cottage cheese: 500 g
- Semolina: 1 tablespoon
- Butter: 180 g

Then add the washed raisins and lemon zest, and mix.
- Raisin: 50 g
- Lemon zest: to taste

In a separate clean and dry bowl, beat the egg whites to soft peaks. Gradually add them to the cottage cheese mixture, gently folding with a silicone spatula from bottom to top.
- Chicken egg: 4 pieces

Generously grease a rectangular baking dish with butter and dust with flour. Transfer the cottage cheese mixture and place it in an oven preheated to 180 degrees for 45–60 minutes. Allow the finished cheese cake to cool completely before removing it from the dish.
- Butter: 180 g

In a small saucepan, heat 70 grams of butter with 40 grams of sugar and cocoa powder until the sugar dissolves. Then add sour cream and mix until smooth.
- Butter: 180 g
- Sugar: 170 g
- Cocoa powder: 3 tablespoons
- Sour cream: 100 g

Flip the cheese pancake onto a board and cover it with glaze.

Send to the refrigerator for 4-5 hours, after which it can be served with tea.
