Sift the flour, add room temperature margarine and salt. Rub everything until a crumbly consistency of 'fat flour', then add the yeast.
- Premium wheat flour: 500 g
- Margarine: 150 g
- Salt: 1 teaspoon
- Dry yeast: 11 g

In a separate bowl, mix eggs, sugar, and slightly warmed kefir.
- Chicken egg: 2 pieces
- Sugar: 1 tablespoon
- Kefir 1%: 200 ml

Combine all ingredients and knead into a uniform dough. Cover with a lid and place in a warm place for 1.5 hours.

Cut the fish and onion, salt and pepper them, mix and let marinate.
- Red fish fillet: 350 g

Roll out the dough in the shape, evenly spread the filling, cover with a second layer of dough on top, pinch the edges, and brush with egg yolk.
