Grind mustard seeds in a spice grinder or in a mortar with a pestle.
- Yellow mustard seeds: 140 g

Add dry mustard, water, wine (not very acidic), and vinegar.
- Dry mustard: 3 tablespoons
- Water: 1 glass
- Dry white wine: 125 ml
- Apple cider vinegar: 125 ml

Leave for 2 hours, mix well and season to taste. Close tightly with a lid and leave in the refrigerator for 2-3 days.
