Homemade mayonnaise with lemon juice is a classic of French cuisine, born in the era of exquisite sauces. Its delicate, velvety texture and light tang of lemon add a special zest to any dish. Unlike store-bought versions, this mayonnaise has a bright, rich flavor that unfolds thanks to fresh ingredients. It is ideal for dressing salads, complementing meat and fish dishes, as well as for creating sauces. It takes just a couple of minutes to prepare with a blender, and the main secret is the proper mixing of ingredients to achieve an airy consistency. With lemon juice, it gains freshness, making the taste more refined and balanced. This mayonnaise is a find for gourmets who appreciate naturalness and flavor in every drop.

1
Mix salt, sugar, lemon juice, and any spices you want, just not salty ones.
- Salt: 0.3 teaspoon
- Sugar: 0.5 teaspoon
- Lemon juice: 1 tablespoon
- Spices: to taste
2
Pour oil into a jar or any other container (diameter like the blender or slightly wider, but not much — this is IMPORTANT!), and add the previous mixture.
- Vegetable oil: 150 ml
3
Add mustard. Do not mix.
- Mustard: 1 teaspoon
4
We break a whole egg. IMPORTANT that the yolk remains intact.
- Chicken egg: 1 piece
5
Lower the blender into the jar until it hits the bottom, ensuring the yolk is inside the cell with the blade.
6
Turn on the blender for 5-10 seconds without lifting it. Then for another 10 seconds.
