Chop the onion finely. Heat oil in a cast-iron skillet over a fairly high heat, but not so much that the oil starts to smoke. Sauté the onion, stirring until lightly browned, then reduce the heat and cook the onion until soft, about eight minutes, stirring less frequently.

Add large torn spinach leaves and sauté until wilted. Remove the pan from heat, let the spinach-onion mixture cool slightly, transfer to a bowl, mix in cream cheese and sour cream, season with salt and pepper, cover the bowl, and let it sit for at least an hour.
