Rinse the ramson well and boil in salted boiling water for 30 seconds, then immediately transfer to ice water. Squeeze out excess water and dry. Chop finely.

In a large bowl, mix softened butter, lemon juice, grated lemon zest, wild garlic, salt, and pepper. Optionally, add a little thyme.
- Butter: 2 kg
- Lemon: 2 pieces
- Salt: to taste
- Ground black pepper: to taste
- Thyme: to taste

Lay out about 4 sheets of parchment on the work surface, place 0.5 kg of butter mixture on them in the form of long sausages. Tightly roll and send to the freezer until firm.
