Pea-mint sauce is a delicate and refreshing condiment that perfectly combines the sweetness of green peas with the cool freshness of mint. This sauce has European roots and is often used in British cuisine, where peas and mint are a classic duo. It is quick to prepare: peas are lightly boiled with butter, fresh mint and spices are added, and then blended to a creamy consistency. The sauce has a velvety taste with sweet and herbal notes that complement fish, meat or fresh vegetable dishes beautifully. It can be used as a pasta sauce, a side for roasted or baked products, or as a light snack with bread or crackers. Due to its simplicity in preparation and rich flavor, this sauce will be an excellent addition to any table.
