Rice paper rolls are a light, airy dish of Japanese cuisine that combines fresh ingredients and delicate flavor. This type of roll emerged as an alternative to traditional sushi, allowing for experimentation with fillings without using nori. A thin rice sheet soaked in warm water becomes elastic and easily wraps around fragrant rice infused with a mixture of rice vinegar, sugar, and salt. Inside are soft cream cheese, crunchy cucumber, crab sticks, and spicy red caviar. Each bite offers a balance of freshness and richness, while the final touch—sprinkling with grated cheese or sesame—adds textural complexity. These rolls are convenient to serve and perfect for both casual snacking and festive gatherings, providing not only taste but also aesthetic pleasure.

Wash the rice, place it in a pot, add water in a ratio of 2 parts water to 1 part rice, let it sit for half an hour, then put it on the stove, cover with a lid and bring to a boil over high heat, reduce the heat to minimum, cook the rice for 15 minutes, turn off the heat and let the rice sit covered for another 15 minutes.

Next, a dressing for rice is prepared from rice vinegar, sugar, and salt; The cooked rice is transferred to a large container and drizzled with the prepared vinegar dressing.
- Rice vinegar: 60 ml
- Salt: 0.5 teaspoon
- Sugar: 0.5 teaspoon

Now the process. Soak the rice paper in warm water for 20 seconds, transfer it to a mat and place and spread rice in the center. On top of it, add any ingredients (cheese, I used cream cheese, peeled cucumber, crab stick; you can also add a folded lettuce leaf or just cheese and caviar or fish if you have it).
- Rice paper: 5 piece

Now carefully roll the roll using a mat, the rice paper sticks well. After that, I placed the roll in the refrigerator for about 20 minutes. The rice sheet dries out there, making it easier to cut.

Optionally, the rolls can be sprinkled with grated cheese or rolled in sesame. Cut it into 8 pieces and it's ready!
