Heat the pan over high heat. Sauté the onion, tomatoes, and garlic in a dry pan until charred on all sides, then transfer everything to a food processor with 'Chipotle', blend until smooth, and season well with salt.

Place the pumpkin in a microwave-safe container, add some water, cover with plastic wrap, and heat in the microwave for 10 minutes until soft. (Or steam until soft.)

Mash with a fork and salt. Add black beans and mash the mixture again with a fork, then add jalapeño pepper, cheddar cheese, cilantro, and lime juice.
